Musings from a promise-collector

I really enjoy making these muffins! They are perfect for Thanksgiving and Christmas. And they are so yummy that they disappear quickly.

A couple of handy notes:

1. You will need a rather large bowl to mix the batter in, because one batch makes 3-3.5 dozen muffins.

2. You may want to substitute plain applesauce for the oil (it is a 1:1 ratio) if you do not want to use that much oil. It works – I’ve made them both ways.

Pumpkin Chocolate Chip Muffins

  • 4 eggs
  • 2 cups sugar
  • 1 can (16 oz ) pumpkin filling
  • 1.5 cups vegetable oil
  • 3 cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 2 cups (12 oz) chocolate chips

In a large bowl: beat eggs, sugar, pumpkin, and oil until smooth.

Combine in another bowl: flour, baking soda, baking powder, cinnamon, and salt. Add to pumpkin mixture and mix well. Fold in chocolate chips.

Fill greased or lined muffin cups 3/4 full. Bake at 400 degrees Fahrenheit for 16-20 minutes until muffins test as done. Cool in pan for 10 minutes before removing.
